Healthy Gluten-Free Banana Chocolate Chip + Pecan Protein Muffins

Servings 12 muffins


3 large ripe bananas, mashed
1/3 cup olive or vegetable oil
2 eggs
2/3 cup coconut syrup / coconut sugar
1 teaspoon vanilla extract

2 cups gluten-free flour
1 scoop of protein powder (vanilla)
1/4 teaspoon fine sea salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 cup chocolate chips (optional)
1/2 chopped pecans (optional)


  1. Preheat oven to 350°F and prepare a muffin pan. Line a muffin pan with paper liners or spray each line with cooking spray to prevent sticking.
  2. Mix the first five ingredients together until well-combined.
  3. In a separate bowl, do the same for the remainder of the ingredients excluding the two optional ones.
  4. Add the dry mixture to the wet and fold until blended.
  5. If desired I added the chopped pecans and chocolate chips.
  6. Spoon batter to your prepared muffin pan and bake for 15-18 minutes or until a toothpick comes out clean.
  7. Let cool completely before slicing and icing with peanut or almond butter!
