The Ultimate Vegan Taco Bowl -

1 green onion, chopped
1/3 cup black rice
1/4 can black beans
1 tomato, diced
1 package Beyond Chick'n Strips
1 pagcakge (185g) taco seasoning
2 tsp garlic, minced
1 handful cilantro
2 tsp vinegar
2 tsp lime juice

  1. Cook the rice according to the instructions on the box. Season with lime juice, vinegar and cilantro.
  2. Fry garlic in a pan with a splash of water. Add Chick'n, beans and corn. season with taco seasoning.
  3. Add the rice to a bowl; add the fried pan mixture, and top with chopped tomato, green onion and additional cilantro.
