Classic Meat Loaf

Serves 6

In this day and age of new, bigger and better, sometimes we forget the appeal of homegrown classics. Have a taste of your childhood and win dinner with this classic meat loaf recipe that is sure to please whether you're feeding family, friends or just yourself.


2 eggs
1/3 cup sugar free ketchup, divided
1/2 yellow onion, peeled & finely chopped
10 cremini mushrooms, finely chopped
1 tbsp Worcestershire sauce
1 tsp sea salt
1/2 cup oats
1 1/2 lbs lean ground beef


  1. Preheat the oven to 325 and line a loaf pan with parchment paper.
  2. In a large bowl, mix together the eggs, half the ketchup, onion, mushrooms, Worcestershire sauce, salt, oats, and ground beef, until just combined.
  3. Add the mixture to the loaf pan and evenly press down. Spread the remaining ketchup on top.
  4. Bake for 80 minutes or until the internal temperature reaches 160.
  5. Allow to rest for 10 minutes, then serve.
