Elevate Your Taco Game!

Chicken Fajita Skillet

Take your taco Tuesday to the next level with this easy recipe. Going to a restaurant and ordering fajitas can ruin your daily calorie and macronutrients goals because they’re usually full of oil and loaded with too much cheese, sour cream, and guacamole. This recipe will allow you to indulge and get that great fajita taste, without the stomach ache and regret.

Ingredients:

(Serves 2)

2 tbsp. olive oil
2 boneless skinless chicken breasts (or ½ a pound of lean ground beef)
1/2 onion, sliced
1/2 tsp. ground chili powder
1 1/2 tsp. oregano
1 tsp. garlic powder
1 cup red, yellow, and/or green peppers, sliced
1/4 cup salsa (optional)
1/4 sour cream (optional)
1/4 cup cheddar cheese, grated

Directions:

  1. Preheat a skillet (or non-stick pan) to medium-high heat and add the olive oil. Add the chicken (or beef) and cook for 4-5 minutes, or until it is almost cooked through.
  2. Add the onion, chili powder, oregano, and garlic powder to the skillet. Cook for 2 minutes, and then add the peppers. After 2-3 minutes, remove the ingredients from the skillet and set aside.
  3. To assemble your plate, top the chicken (or beef) with onion and peppers. Add the salsa, sour cream, and cheddar cheese as desired.
